I’m going to give you the original recipe. Then I will give you how I make it. The original recipe is a very unique sweet and then hot taste. I make it a little less sweet.
24 medium tomatoes I like romas and Amish paste tomatoes.
*Wash, scald and peel tomatoes. Cut into quarters. Put into heavy pan and cook 1 hour. Skim off juice while cooking.
Chop the following by hand. I process this in a food processor. My family likes smooth salsa. That way they can tell themselves that salsa really isn’t made from vegetables.
2 large onions
1 sweet red pepper
2 large green peppers
1 medium clove garlic (I add about 3)
2-4 hot peppers (I add MANY more…..all different varities.)
Mix in the above and cook for 45 minutes. Then add:
3T sugar
5T brown sugar
1/4 cup cider vinegar
6t salt
(I half the sugar amounts.)
Cook again for 30 minutes. Fill bottles and process for 10-15 minutes up to 10 pounds.
(We process longer and at a higher pressure.)
Makes 5-6 pints
